Banish dry pork from your kitchen! I’ll show you how to cook a baked pork steak recipe in the oven — it cooks up tender and juicy every time. With a combination of pork shoulder steaks, savory seasonings, and a low and slow bake in the oven, this healthy dinner strikes the perfect balance of impeccable flavor and texture.

What Is Pork Steak?

Pork steak is a cut of meat taken from the upper part of the front leg of a pig, part of the shoulder. It contains some fat marbling throughout. Pork steak recipes are usually cooked by grilling, pan frying, or baking.

To get juicy, tender meat, I start by cooking pork steaks on the skillet and finish them off in the oven. I’ve used the same stovetop-to-oven method for other cuts of meat, including sirloin steak,baked pork chops,New York strip steak,pork sirloin roast and broccoli stuffed chicken. The results are always phenomenal!

Ingredients & Substitutions

This section explains how to choose the best ingredients for oven baked pork steaks, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

  • Pork Steaks– Also known as blade chops, blade steak, blade roast, or pork shoulder steaks. Choose 1-inch thick steaks for the best results, as these will be less prone to overcooking.
  • Olive Oil– For searing. Avocado oil is also a great choice.
  • Spices – Including sea salt, black pepper, and garlic powder. You could also add other spices, such as paprika, cumin, or onion powder.
  • Worcestershire Sauce – The acids in the sauce help break down the proteins in the pork steak, which make it more tender. Plus, you get an extra layer of flavor. We’re only using a small amount of worcestershire sauce, but if you don’t have any or don’t want to use it, coconut aminos or low-sodium soy sauce would make good substitutes.
  • Fresh Herbs – I used fresh parsley and fresh rosemary, but you can sub for other herbs, such as thyme, chives, or oregano. If you don’t have fresh herbs on hand, you can substitute the 2 tablespoons of fresh herbs with 2 teaspoons dried herbs instead.

VARIATION: Swap seasonings!

I find that the above combination of spices and herbs make the ideal flavoring, but you could also try pork chop seasoningor Italian seasoning if you prefer a different flavor profile. Marinating the steaks in pork chop marinade before cooking would be another delicious option.

How To Cook Pork Steak In The Oven

  1. Prep. Preheat the oven. Heat oil in a large, oven-safe skillet(preferably a cast iron skillet)over medium-high heat, until screaming hot.
  2. Season. Trim any excess fat off of each steak. Pat dry with paper towels. Season with salt, pepper and garlic powder on both sides.
  3. Sear. Transfer steaks to the pan in a single layer. Sear until browned.

  1. Add sauce and herbs. Pour Worcestershire sauce on each steak, then sprinkle fresh herbs over the top.
  2. Bake. Cook in the oven until the pork steak temp reaches 145 degrees F in the thickest part, testing with a meat thermometer.
  3. Rest. Transfer to a plate and cover with aluminum foil to restbefore serving.

How Long To Cook Pork Steaks In The Oven?

After searing both sides on the stovetop, bake pork steaks for 10-15 minutes, or until the internal temperature reaches 145 degrees F.

Tips For The Best Pork Steaks

  • Choose the largest possible skillet. I used a 12-inch skillet to fit all 4 steaks. If they don’t fit, it’s best to cook them in batches, or use two skillets.
  • Use cast iron if you can. I highly recommend cast iron for any kind of steak, whether you’re cooking beef steak (like a sirloin steak recipe, filet mignon, or ribeye) or this pork steak recipe. Cast iron heats up and retains heat much better than pans made from other materials, which gives steak a perfect sear and helps prevent overcooking the inside.
  • Make your skillet sizzling hot before adding the pork. Otherwise, they won’t form that nice crust. Heating the pan should take about 2-3 minutes. The oil should shimmer and slide around the pan easily.
  • Check internal temperature with a meat thermometer. This is the best way to ensure that steaks are perfectly cooked. You can use a regular meat thermometer, but I like to use a probe thermometer for oven recipes like this one, because it beeps when the right temperature is reached and I don’t have to keep opening the oven.
  • Don’t forget to rest. Letting meat rest lets the juices inside settle, so the end result won’t be dry.

Storage Instructions

  • Store: Wrap leftover pork shoulder steaks tightly in plastic wrap or place in an airtight container. Store in the refrigerator for up to 3-4 days.
  • Reheat: Place the steaks in a baking dish, cover with aluminum foil to help retain moisture, and reheat in a preheated oven at 350 degrees F. You can also use the microwave, but the result will be more dry.
  • Freeze: Place leftovers in either a vacuum-sealed bag or airtight container and store in the freezer for up to 3 months. Before reheating, thaw in a bag submerged in cold water or in the fridge overnight.

What To Serve With Pork Steak Recipes

This dish works well with a variety of sides. I served it with roasted potatoes and roasted broccoli (pictured above), but here are some other ideas:

  • Sauce – Make this dish a comforting meal by drizzling it with a creamy mushroom sauce.
  • Vegetables – Veggie sides like sauteed mushrooms,stir fry vegetables, orsauteed zucchiniall pair well and can be made on the stovetop while you have the pork steaks in the oven.
  • Potatoes – Meat and potatoes are a classic meal option. Try roasted sweet potatoes, mashed potatoes, or less starchy alternatives like mashed cauliflower and roasted rutabaga.
  • Cheesy Casseroles – For a larger crowd, pair this oven baked pork steaks with loaded cauliflower casserole, zucchini casserole, yellow squash casserole, or asparagus casserole.
  • Salads – Try pear salad or orange mandarin salad for a sweet touch. For classic options, make a kale crunch salad or spring mix salad.
  • Leftovers If you’ve got leftovers on your hands, don’t despair! There are plenty of scrumptious ways to use them. Why not slice the steak thinly and make some tasty wraps? Or dice up the pork and add it to some hearty pork loin stew? You could even shred the meat for tacos and burritos (or a burrito bowl).

  1. Preheat the oven to 350 degrees F (177 degrees C).

  2. Heat the oil in a large cast iron skillet over medium-high heat, until screaming hot.

  3. Trim any excess fat off of each pork steak. Pat dry with paper towels on each side. Season with salt, pepper and garlic powder on both sides. If you have time, let the seasoned pork steaks sit at room temperature for 30 minutes before cooking.

  4. Once the oil is hot, transfer steaks to the pan in a single layer. Sear for 2-3 minutes per side, until browned.

  5. Remove from heat. Pour ½ tbsp of worcestershire sauce on each steak, then sprinkle fresh herbs over the top.

  6. Transfer to the preheated oven. Bake for 10-15 minutes, until the pork reaches 145 degrees F (63 degrees C) in the thickest part of the steak.

  7. Remove from the oven, transfer to a plate, and cover with aluminum foil to rest for 5 minutes before serving.
